My father made the world’s most infallibly tasty aaloo parathas ever!
A day before he passed on, he whispered to me, “When you make the potato filling, wave your hands over it, add a little bit of nothing and leave it sitting out for around twenty minutes. The nothing – THAT’S the key!”
Of course, I didn’t believe him, but today, I decided to try it myself. Just like he said. A dash of a little bit of nothing, left to soak into the paratha for twenty minutes.
My daughter took one bite of the paratha and said, “Yummmy mum! This is the BEST paratha ever! What did you put into it?”
I saluted my dad mentally and replied, “Nothing really, dear, nothing.”
